Pizza Dough FLIPPED Mini Cupcake Pizzas

I love pizza dough! A. There are so many things you can do with it, sweet or savory (see archive for mini cupcake Pigs in a Blanket) and B. It comes pre-made either at your local pizzeria or Trader Joes, so it's easy to grab out of the fridge and make a meal for the family in minutes!

Pizza dough
Tomato Sauce (OK, this NJCHICK won't wince if you buy jarred sauce. I know we're keeping it easy).
Mozzarella (PS: Trader Joe's even sells those mini mozzarella balls in a plastic tub).

Preheat oven to 400 degrees.
Crack out your cupcake tin (I'm using the mini cupcake tin above) and spray with non-stick cooking spray.
Using a knife, cut the pizza dough into squares (again depending if you are using the regular cupcake tin or the mini cupcake tin ... AND whether you like Chicago-style dough or NY thin crust) and sprinkle with flour.
Take each square and roll into a little ball (you can flour your hands to make this easier).
Place in each cupcake circle.
Add a bit of tomato sauce to each (You can even sprinkle with salt, pepper, and garlic powder, if desired)
Then add either a sliced small mozzarella ball to each (or for the mini's, I just added one ball per circle).
Bake for 15-20 minutes, depending on your oven.
Cool a bit, then pop out of the cupcake tin and serve.

This recipe is GREAT for a Pot Luck, holiday, birthday or to keep handy for when the kids are STARVING after school! Get creative, add olives, mushrooms, pepperoni, left-over meatballs, etc.
